Almond and Chia Energy Bites Recipe

date chia energy bites

  • 1-1/3 cup almonds ((about 7 ounces))
  • 14 ounces Medjool dates ((about 20 dates))
  • 4 tablespoons raw cacao powder
  • 2 tablespoons almond butter
  • 2 tablespoons coconut oil
  • 2 tablespoons chia seeds
  • (Optional: shredded coconut)
  1. Start by putting the almonds in a food processor and pulse for about 30 seconds, or until they’re nicely crushed.
  2. Pit the dates and add them to the food processor.
  3. Then add all the other ingredients and 2 tablespoons water to the mixture and blend again until everything is combined and it’s all nice and sticky.
  4. Roll the mix into balls.
  5. For added flavor, roll the balls in shredded coconut.
  6. Place the balls in the freezer for an hour to set, then store in an airtight container in the fridge.
  7. If you don’t have any almonds, try swapping them for any other nuts. You can also add things like hemp protein, peanut butter or maca if you want to give more goodness to each bite.
Makes about 20 balls.
