Apple Cranberry-Almond Coleslaw
- 4 cups of green cabbage (, shredded; or one bag shredded cabbage)
- 2 cups apples cut into matchsticks
- 1 cup red cabbage (, shredded)
- 1 cup slivered almonds
- 1/2 cup dried cranberries
- 1/4 – 1/2 cup green onions (, finely chopped)
Dressing
- 1/2 cup plain greek yogurt
- 1/2 cup mayonnaise
- 2-3 tablespoon honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon dried mustard
- 1/2 teaspoons celery seeds
- Salt and pepper to taste
- Combine cabbage (green and red), apples, carrot, almonds and cranberries in a large bowl. Toss them together.
- In a medium bowl, mix dressing ingredients together until smooth.
- Pour dressing mixture over salad. Mix together until everything is evenly coated.
- Refrigerate for 30 minutes. Serve chilled.
