Apple Cranberry-Almond Coleslaw

  • 4 cups of green cabbage (, shredded; or one bag shredded cabbage)
  • 2 cups apples cut into matchsticks
  • 1 cup red cabbage (, shredded)
  • 1 cup slivered almonds
  • 1/2 cup dried cranberries
  • 1/4 – 1/2 cup green onions (, finely chopped)

Dressing

  • 1/2 cup plain greek yogurt
  • 1/2 cup mayonnaise
  • 2-3 tablespoon honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dried mustard
  • 1/2 teaspoons celery seeds
  • Salt and pepper to taste
  1. Combine cabbage (green and red), apples, carrot, almonds and cranberries in a large bowl. Toss them together.
  2. In a medium bowl, mix dressing ingredients together until smooth.
  3. Pour dressing mixture over salad. Mix together until everything is evenly coated.
  4. Refrigerate for 30 minutes. Serve chilled.
