Easy Healthy Desserts: A Raw Apple Pie Recipe

In Food As Medicine by carolynhLeave a Comment

I have to admit, there’s nothing like the smell of a delicious, homemade apple pie baking in the oven. Unfortunately, when you cook your food, especially at a high temperature, it destroys the naturally occurring enzymes which can help your body heal. Your body needs these enzymes to metabolize foods efficiently.

If you’re looking for easy healthy desserts this Thanksgiving, this raw apple pie is one worth not cooking. Besides being yummy, it’s chock full of enzymes.

I often refer to cooked foods as dead. They have no life in them. They are hard to metabolize efficiently, and your body becomes overwhelmed just trying to process them. If your body is working overtime to metabolize junk, it has no energy left to fight off your disease and help you heal.

By adding some raw foods into your diet, it helps you absorb the crucial vitamins and minerals needed for optimal health. While I am not advocating you start eating a fully raw diet, adding fresh foods to your plate during each meal is a good way to get the crucial nutrients you need.

What better time to start than the holidays? If you want to give it a go, incorporate at least one healthy dessert into your Thanksgiving menu. Begin with this Raw Apple Pie Recipe by Fully Raw Kristina.

An Easy and Healthy Dessert

The ingredients in this Raw Apple Pie recipe are packed with essential nutrients and enzymes. I love my living foods!

Here are just a few of the numerous benefits you’ll get from these healthy ingredients:

Apples – Rich in antioxidants, flavonoids and dietary fiber.
Dates – A good source of dietary fiber, antioxidants, and essential minerals.
Figs – Contains beneficial nutrients including vitamin A, vitamin B1, and vitamin B2.
Cinnamon – Can be used to help treat the common cold and lower blood sugar.
Nutmeg – Increases immune system function and soothes indigestion.

Besides being an easy, healthy dessert, this recipe is a real time-saver since there is no cooking time involved. I made it the other night, and my son (who is a picky eater) loved it! Unfortunately, my pictures didn’t come out quite as pretty as Kristina’s!

Ingredients:
Approximately 10 apples of your choice (Fuji or Honeycrisp)
3-4 pounds of pitted dates
Raw dried figs (fresh figs work as well)
Cinnamon
Nutmeg

Directions for the crust:
In a food processor, combine the dried figs and approx. 2 lbs of dates until it reaches a cookie dough consistency. Press this crust into the bottom of your pie pan dish.

For the apple pie filling:
Blend 3 apples with approx 1 lb of dates, cinnamon, nutmeg, and a small bit of water until it reaches a thick, smooth, pie filling consistency.

For the layers:
Thinly slice your apples with a knife or with a mandolin and start layering your apple slices with your pie filling as shown in the video. I alternate between an apple layer with an apple pie filling spread layer. Layer up to the top, remove the hold, and slice yourself a little piece of heaven! Enjoy immensely and share with family and friends!
